Vegetable Stuffed Baked Potatoes














Vegetable Stuffed Baked Potatoes

I had some leftover baked potatoes in the frig so I scooped them out (leave some potato in the potato skin) and put the following in a bowl.

Potato (the part you removed)
Frozen Broccoli, Carrot, Cauliflower Mix

Heat the preceding in the microwave until hot

Add the following and mash with a potato masher

1 Tablespoon Butter
Milk (this amount needs to be gauged by the mixture's moisture level)
Salt and Pepper

Stuff the potato skins with the mashed mixture and sprinkle with fresh Parmesan Cheese.

Bake at 400 degrees until cheese is brown.

Baked Bean Pizza















My husband went to Costco and bought a case of beans. We may eat 2 cans in a year so I made an attempt to come up with something to do with them. My family was leery but the consensus was that it worked and was a surprisingly tasty side dish.

Flour tortillas
Can of Baked Beans — I mashed them with a measuring cup
Chopped sweet onion

Spread the beans on the tortillas. Sprinkle the onion on top and bake at 450 degrees until the tortilla is brown and crispy.

Microwave Brownies in a Coffee Mug
















This is a nice treat to make when you want something chocolate.

The recipe serves 4 and is best eaten warm; microwaved baked goods tend to dry out if you let them sit. You combine the following ingredients and microwave them for 3.5 minutes in 4 mugs. There should be a gooey sauce on the bottom. You don't need to spray the cups with Pam.

1/2 cup flour
1/2 cup sugar
1/4 cup cocoa
2 eggs
1/2 cup milk
1/2 teaspoon vanilla
handful of chocolate chips
handful of nuts
